Cauliflower is a type of cabbage. Of course, this is one of the few cabbages where you don't eat the leaves, but rather the cauliflower itself.
Cabbage that is not harvested develops flower stalks with white-yellow flowers. Hence the name cauliflower.
As well as the classic white cauliflower, there are also purple and green varieties, including ‘romanesco’.
Our cauliflower comes mainly from the Taragona region of Spain.
